RECIPE BOX: A jump start on a new season 

Are you looking for simple fall treats to sneak for yourself or share? This is just the place to snag a delicious and quick recipe.

We all are tempted by the crisp fall air to try to do all of the fall things. Hayride, carve pumpkins, build a scarecrow, pick apples, and the long list of ideas goes on! We just simply cannot do it all. I love to bake with my family but it isn’t always realistic to pour ourselves into elaborate concoctions. I came across pumpkin muffins that only require two things. That’s it! They are moist and refreshing. This is the perfect autumn dessert to make with a child, bake for a friend, or prepare ahead for breakfast. These also can be made, cooled, and placed in baggies for the freezer. Pop them out when you want them and within 30 minutes of sitting on your counter they will be thawed and ready to enjoy!

Do you always wonder how people get so much done around the holidays? My neighbor shows up with homemade fudge every year. Making fudge can seem time consuming and overwhelming, especially during the holiday season. With this simple two ingredient fudge recipe, you can easily make fudge for your entire neighborhood and still get the presents wrapped and placed under the Christmas tree.

So... why not combine the three into an absolutely epic cookie. These cookies are packed with flavor and have the most delicious texture. They're dense and chewy, which I love in a cookie, and the pumpkin flavor combined with the chocolate chips is seriously the best. These easy fall recipes are sure to leave you feeling accomplished in the kitchen this fall.

Peanut Butter Fudge

Only two ingredients

1 (16 ounce) can vanilla frosting 

1 (18 ounce) jar peanut butter

Directions

Empty entire jar of peanut butter in a mixing bowl. Hear vanilla frosting in its container (make sure you pull off all the foil lining) in microwave for about 60 seconds or until completely melted. Pour the melted frosting in the bowl with the peanut butter and mix well. 

Quickly pour the mixture into a 9x13 pan, allow fudge to set, cut into small squares, and enjoy!

Pumpkin Muffins

Only two ingredients

Just the cake mix and the pumpkin. 

No, oil, no eggs, no water, nothing else. 

Bake at 350 degrees for 20-25 minutes.

Pumpkin Oatmeal Chocolate Chip Cookies

Ingredients

1 cup salted butter

1 cup brown sugar

1 cup granulated sugar

2 teaspoons pumpkin pie spice

1 cup pumpkin puree

1 egg yolk

1 ½ cups flour

½ teaspoon baking powder

2 ½ cups quick oats

1 ½ cups semisweet chocolate chips

Directions

Combine the wet ingredients - In a large mixing bowl, combine butter, sugars, and pumpkin pie spice and beat with an electric mixer until creamy. Add the pumpkin and egg yolk and beat until smooth.

Add the dry ingredients - Mix in the flour and baking powder and beat on low speed until combined. Stir in the oats and chocolate chips.

Drop onto cookie sheet - Drop dough by about 2 tablespoons 2 inches apart on an un-greased cookie sheet.

Bake - Bake cookies at 350 degrees 16-20 minutes or until edges are golden brown.

Cool - Cool on cookie sheet 10 minutes; remove to a wire rack to cool completely. Enjoy!
