RECIPE BOX: Bowl full of fun 

Trading in a floured burrito for a bowl is less carbs and a bowl full of fun. Taking time to meal prep and plan ahead by stocking your pantry and refrigerator with the needed items is essential. One of the biggest obstacles to eating healthy is prioritizing the preparations. When food is ready and accessible, it simply encourages us to go for the good things that are now at our fingertips. 

A beef burrito bowl brings all the healthy goodness together with a bounty of options. Add what you like and skip what you don’t. Sour cream and guacamole are easily added or left off. Perhaps you’d like to pass on topping with tomatoes and replace it with salsa. Whatever the combination, it’s your bowl. Prepping the beef and seasonings ahead and placing in the fridge, along with any other toppings you choose to prepare, allows you quick access to a healthy meal at any moment. If you’re feeling adventurous, double the ground beef recipe and graze on these protein packed bowls all week long.

The most important meal of the day is when you wake up and break your overnight fast. To jumpstart your metabolism, steer clear of starch and sugar. Indulge in a breakfast bowl to meet your needs and kickstart your morning. 

Like the beef bowls, the options are endless. Cook your desired amount of sausage ahead of time. You can scramble up a few eggs each morning and add in the pre-browned sausage one bowl at a time, or scramble eggs for the week and heat your bowl contents up as needed. Substituting the sausage for bacon or ham gives you a variety of options. If you want to skip the meat, adding spinach to your scrambled eggs will give color and a variety of nutrients to your morning. For me, topping with a sharp shredded cheddar seals the deal. Try grating a block of fresh cheese. The freshness will overwhelm your taste buds.

Beef burrito bowl 

INGREDIENTS

For the Beef

·        2 tsp ground cumin

·        ½ tsp onion powder

·        ½ tsp garlic powder

·        ½ tsp ground chili powder

·        ¼ tsp paprika

·        ⅛ tsp cayenne pepper

·        1 tbsp oil

·        1lb ground beef

·        ⅓ cup water

·        salt & pepper to taste

For the Salsa

·        1 tomato diced

·        3 cans of corn, drained

·        ⅛ red onion diced

·        ½ lime juiced

·        salt, to taste

For the Guacamole

·        1 avocado

·        ½ lime juiced

·        salt & pepper to taste

To Serve

·        2 cups cooked white rice

·        sour cream

·        grated cheese

INSTRUCTIONS

·        Combine spices in a small bowl and set aside. In a large frying pan on medium heat, add oil and burger, breaking up big chunks until small. Cook until browned and add spice mix along with water and allow to simmer until the liquid has reduced. Season to taste with salt and pepper.

·        Meanwhile, add all the salsa ingredients to bowl and stir to combine. Set aside. For the guacamole, add avocado and lime juice to a bowl and mash with a fork until desired consistency. Season to taste with salt and pepper and set aside.

·        To serve, divide meat and rice evenly between four bowls and top with salsa, guacamole, sour cream and cheese.

Breakfast Bowls

INGREDIENTS

·        2 whole eggs

·        1 Tablespoon butter

·        1/4 cup sausage, cooked and crumbled

·        Sprinkle of cheddar cheese

·        Salt & pepper to taste

INSTRUCTIONS

·        Start by cracking two eggs into a bowl and scramble with a fork until all mixed together.
2 whole eggs

·        Add butter to skillet over medium high heat.
1 Tablespoon butter

·        Once melted, add eggs to pan – stirring around often – careful not to over cook.

·        Once the eggs are mostly set but still glossy, add the sausage and cheese.
1/4 cup sausage, cooked and crumbled. Sprinkle of cheddar cheese.

·        Remove from heat and mix in well.
